No-Bake Blueberry Cheese Cake with Apple Biscuits & Ricotta Filling

Ingredients

Take this list with you to any of our 8 supermarkets:
  • 1 Packet
    Carrefour Biscuits with Apple Filling
  • ½ Packet
    Digestive Biscuits
  • 1 Kilogram
    Ricotta
  • ½ Cups
    Milk
  • ½ Cups
    Icing Sugar
  • 2 Teaspoons
    Lemon Juice
  • 1 Teaspoon
    Vanilla Extract
  • 5 Tablespoons
    Butter
  • 100 Grams
    Blueberries

Instructions

  1. In a food processor, crush the apple biscuits and digestive biscuits together, and pour into a bowl. Melt the butter and mix together with the crumbs.

  2. Pour the damp mixture into a round baking tray and, using the bottom of the glass, press down to form a firm layer. Chill for about 30 minutes.

  3. In a food processor, mix together the ricotta, milk, vanilla, lemon juice and sugar until a smooth (not too smooth) mixture forms. Lay over the chilled biscuit base, add the blueberries and chill. Serve chilled.
