In a large bowl, add the salmon, green onion, parsley, lemon zest and eggs, and mix well.
Add the cooked quinoa, and season with salt and pepper. Use your hands to combine in burger patties.
In a large pan, heat olive oil over medium to medium high heat and fry the patties in batches. Flip and repeat.
Serve in a bun or with a fresh summer salad.
